Ginger shortbread springerle

King Arthur Flour is really into springerle cookies this holiday season. The traditional recipe takes about three days to make, but this new shortbread version only take a few hours. The dough is lovely and "short" as they say on Great British Bakeoff, and it holds fine details well. I made all these shapes with the same dough and brought them to work for a cookie swap.
